PS: Recipes for the two cold soups:
1. Cucumber and avocado soup:
- Ingredients: 2 cucumbers, 1 avocado, 1 clove garlic, 1/2 onion, 1 cup vegetable broth,
1/4 cup Greek yogurt, olive oil, vinegar, salt and pepper to taste.
- Preparation: Blend all ingredients until smooth creamy. Serve cold with a garnish of
chopped cucumber, avocado and croutons.
2. Cold tomato and watermelon soup:
- Ingredients: 3 ripe tomatoes, 1/2 watermelon or Patilla, 1 small onion, 1 garlic clove,
1/4 cup olive oil, balsamic vinegar, fresh basil, salt and pepper to taste.
- Preparation: Blend the tomatoes, watermelon, onion and garlic. Add the olive oil,
balsamic vinegar, basil, salt and pepper. Blend until smooth. Serve cold with a garnish
of feta cheese and croutons.
